Shrimp and Chicken Laksa

Laksa Paste
2 medium Red Chili Pepper no seeds
3 cloves Garlic
1 stick Lemongrass
1 tbsp Turmeric
2 cm piece Ginger
1 tbsp Thai Fish Sauce
4 medium Shallots
20 gr Peanutbutter Or 50 gr of roasted peanuts
1 tsp Coconut Butter
20 medium Shrimps
300 gr Chicken Breast
200 gr Egg Noodles The original rrcipe is made with.rice noodles, but I just love the egg ones.
400 ml Coconut Milk
200 ml Chicken Broth
100 gr Bean Sprouts
1/2 Cucumber Optional
1/4 cup Coriander
1 tbsp Coconut Butter
1 Lime
5 leaves Mint

Shrimp and Chicken Laksa

A few weeks ago I was looking again for inspiration since I was feeling like trying a new taste. And that was when I was blessed with the idea of making a Laksa. I remembered from a few months ago, that I was reading about how loved this is in Thailand but also how interesting it’s history is. This Laksa belongs to the Peranakan cuisine which is a very interesting combination of Malay, Chinese and Thai.

But all this being said I won’t torture any longer and keep you away from this amazing recipe. Go ahead an try it and let me know how much you loved it.

*the recipe contains peanut butter as a replacement for 50 gr of roasted peanuts.

Making the paste

Very easy to make if you can easily find all the ingredients. Chop roughly the shallots, paprikas and ginger and add in a blender. Top with the rest of the ingredients and pulse until you obtain a paste. It might take a while, to take your time.


In the meanwhile melt 1 tbsp of coconut oil in a pan and fry the cubbed chicken over high fire. Add the shrimps and continue until the shrimps are pink, 3 to 5 minutes.


Pour the laksa paste on top and lower the fire. Cook for 5 minutes. Add the coconut milk and chicken broth and mix gently. Add the fish sauce and lime juice from 1/2 lime and bring to a simmer to 30 min.


In the meanwhile, cook your noodles in water with salt. Cut the cucumber, if you are using, in very thin stripes and chop finely the coriander and mint.


Lay the noodles on the bottom of the bowl. Pour over soup, chicken and shrimps. Top with coriander, mint, cucumber shavings and bean sprouts. Add a slice of lime and you are ready to go!
