4 Salmon Fillet aprox 600 gr
100 gr Cream Cheese
1/2 cup Milk
1 tsp Plain Flour
1/4 tsp Garlic Salt
1 clove Garlic crushed
1 tsp Dill
1/4 tsp Rosemary
1/2 large Cucumber
2 small Carrot
1 tbsp Honey
1 tsp White Vinegar
2 tbsp Butter
to taste Kosher Salt
to taste White Pepper

I am continuing my list of very healthy and easy to make food with the beautiful pink salmon. Such a nice explosion of colours and tastes, an amazing sweet-salty-sour combination, that is complemented by a smooth, delicate sauce. I have to admit that I am starting to feel sorry that I didn’t eat salmon more often before I moved to the Netherlands and I am making efforts to recover all the lost time.

And if I started talking about effort I will share with you my little pride moments regarding this dish. A few days ago we bought a lot of accessories for Operation: Cooking, because I keep wanting more beautiful photos, like the covers of magazines and yesterday I got to use some of them for this beautiful salmon dish. We are still learning how to plate and how to take photos and make everything look pretty, because, as we all know, the eye is the one that decides what we are going to eat. So from now on you will probably see a lot of colours and little objects in our photos, because we are trying to find our path in this and we have to start experimenting. The Salad

We begin with the salad, because it needs a little time to sit for all the nice flavours to combine. So, cut the cucumber in very thin slices and thin long slices of carrot, using a vegetables peeler. Place them in a bowl and mix with the honey and vinegar.


The Salmon

Pat dry and sprinkle a generous amount of salt on the skin of the fish and heat you butter in a non sticking pan.


When it gets a beautiful almost golden color put the salmon in, with the skin side up. Bake for approx. 5 minutes and flip gently. Crisp the skin and bake for about 8 minutes.


Turn off the fire and put a lid on, so the fish steams for 2-3 minutes. Remove from the pan, place on a paper, skin side down and cover with aluminium foil. Discard the fat.


The Sauce

In a small pan bring your milk to almost a boiling point and mix in the cream cheese. Whisk until everything is combined, on low fire, and add the garlic, salt, dill and rosemary and stir for a more times. Add the flour in and whisk until well combined. At this point your should have a thick sauce that bubbles. If it's too thick add one more tsp. of milk.


The Plate

Put the salmon on your plate, spoon 2 tbsp of hot sauce on top and serve with brown rice and cucumber salad. Healthy and delicious!
