The salad
1 small head Romano salad
2 fillets Chicken Breast
20 gr Parmesan
20 gr Old Cheese I used Old Amsterdam. If you cannot find it just replace with parmesan.
2 Egg hard boiled
4 Anchovies
1 clove Garlic
4 stripes Bacon baked
1 tsp Rosemary
1 tbsp Olive Oil
The Croutons
1/4 tsp Garlic Powder
to taste Garlic Salt
1/2 medium Ciabatta for the croutons
1 tsp Olive Oil
1/2 cup Mayonaise
The Dressing
1/2 cup Crème fraîche
1/2 cup Parmesan
1 tsp Mustard
4 Anchovies
2 cloves Garlic
1/2 tbsp Dill
2 tbsp Milk
3 tbsp Olive Oil

My kind of Caesar Salad


I have to admit that I tried more that 30 Caesar Salad recipes in this life. At home, in restaurants, at friends, delivery. And I could not find one single recipe to put my finger on and say “Yes, this is it!” So I decided to make my own. Please keep in mind that this is not and “original” recipe and that the dressing also has a few changes. And because I was looking for a salad that has enough freshness but it’s also filling, I added some egg and bacon, not too much, just a little bit, to get that homy-dish feeling.

Regarding the sauce, I think I tried more recipes for this than for the salad. A lot cooks go for the skinny version, but the Greek yogurt is a big no-no for me in this combination, so I just kept the regular ingredients, added a little bit dill and crème fraîche and enjoy the fat taste of it. Yes, this is not a low-calories recipe, it has enough chicken in it, lots of salad, a nice amount of cheese and sauce and I would not change it for nothing. And please don’t get me wrong, if I say what I say about this dish, because it’s not gonna make you sick or too full, you are not going to burst or have to unbutton your jeans, but you will have a very nice feeling of satisfaction, that usually a salad doesn’t want to give it us. The crispy croutons, the tender fragrant chicken, delicious old cheese and parmesan, an amazing thick sauce, all on a bed of fresh and crunchy green salad it’s the way to go! Easy to make, very fun to assemble and super-mega tasty.

The chicken

To have a nice start for this salad I would recommend you to cut, peel, and put everything in bowls. Your kitchen will get messy, so you need to be a bit organised. Coat the chicken with salt, pepper and rosemary while the oil is heating in the pan. Brown on both sides and let it cool off. Do not discard the fat.


The Dressing

Grab your blender and have fun! Add the garlic and give it a spin. Add the mayo, cream and mustard and blend until combined. At last add the parmesan cut in very thin slices and the anchovies and blend again, on high speed for 2-3 minutes. Pour the content in a bowl and mix with dill. Cover with plastic foil and refrigerate.


The croutons

Cut the ciabatta in small cubes and put it in a bowl. Drizzle the oil on top and sprinkle with salt and garlic powder. Toss with your hands and bake in the pan for a few minutes, until golden brown. Be careful, they can burn easily. Set aside and drain the fat with a paper towel.


The Cheese

We need to talk about the CHEESE! Because I love it, you love it, we all love it. I chose a very special cheese for this recipe, because of it's intense taste and mature flavour. The Old Amsterdam tastes like a young Parmigiano-Reggiano crossed with an Aged Dutch Gouda and you can actually see little crystals of salt in it, from the process of ageing. If you can find something like this, go for it. It's not a cheap cheese, but it will last for a very long time and it's a delicacy that you should try at least once.

And because the taste is very strong, I combined the Old Amsterdam with a regular parmesan, and it was just the perfect amount of cheesiness.


The assembling

"Peel" the large pieces of salad and place them on the margins of the bowl. Cut the rest or break it with your hands and divide in two bowls and top with little pieces of anchovies. Add on one side the cut chicken, the bacon, the eggs cut in half and on the other one the croutons and the cheese and cover in dressing. And voila! Simply amazing!
