2 normal bags Nachos no flavour
500 g Minced Meat (Beef)
to taste Kosher Salt
4-5 pieces Green Chillies (mild)
1 pack of slices Cheddar I took the Hochland ones because I just love the taste, but you can go for the normal grated cheddar
100 g Gouda Cheese or any other cheese that melts
150 g Black Beans
1 big red Paprika
1 big Red Onion 1/2 will be used in the minced meat and 1/2 for the salsa
1/2 big Cucumber
2 cloves Garlic
100 g Crème fraîche
1/2 tsp Chili Flakes
1 tsp Sunflower Oil
1 tbsp Parsley

So just like I bragged on Instagram and Facebook a few weeks ago, Bonduelle Netherlands sent us a pack with goodies. And for this meal I picked one of my favourites – The Black Beans. Super tasty and very creamy, with a velvet texture and an exotic flavour, just perfect for my nachos!

You know those very tasty snacks that you can order at the restaurants when you don’t want to go for a full meal? Yes, this is one of them. Hear me: Crispy salty nachos with spicy minced beef, lots of cheddar and Gouda cheese and soft black beans. Sounds great, right?

This is just the perfect snack or dinner when your friends decide to stay longer and you are just having too much fun to let the hunger stop you. It’s more than easy, this time, really, it’s just ridiculously easy. All you need is the ingredients above and some tequila for your mood!

The Nachos

Mix the minced meat with the salt, some dry parsley and pepper. Preheat 1 tbsp of oil in a not sticking pan and glaze 1/2 onion, finely chopped. Add the minced meat on top and bake until browned. Brown is good, but not too brown, so keep an eye on it. When it's done take it out of the pan and use a sift to drain the fat.


Prepare two trays that can go in the oven. I have a rectangular one and a round one. Lightly spray it with baking spray. Divide the nachos in two and put them in the trays. Gently press the crisps to crush the points that are sticking out in the middle. Don't make the nachos layer too thick, because you want all of them coated with goodies. So if your trays are too small use 3 or 4. This time you don't need yor fancy dishes.


Add the cheddar on top and sprinkle with some parsley and chilli flakes. Make a layer of minced meat, top with black beans, drizzle over some chilli and parsley and put in the oven for 15-20 min, until the cheese is melted.


The Salsa

Now it's time to talk about my favourite kitchen tool. It only costed me 2 eur (YES from the Lidl!) and practically it just made my life very easy. So if you have one, put the 1/2 onion, the paprika and the cucumber in it, one at a time and twist the blades a few times. If you don't have a little magic helper (get one!) chop everything with a sharp knife, in small pieces. Mix everything in a bowl, crush a garlic on top and using your hands incorporate the oil and the remaining chilli flakes. Give it a little squeeze so the juices have the chance to combine.



Take out the nachos from the oven. Let them rest for 2-3 minutes. Top with salsa and some spoons of cream. Now put them on the table and start fighting for the perfect piece!
