220 gr Filo Sheets
200 gr Feta Cheese
200 gr Spinach
200 gr Leek
2 Egg
1/4 tsp Oregano
to taste Kosher Salt
1 clove Garlic crushed
2 tsp Olive Oil

Feta and Spinach Surprise

You already know that I love Greek food and the combination spinach-feta and you also know that I like to make things that come out of the oven pretty, so this is the perfect definition of a cute and very tasty dish. I got inspired by a frozen package of filo pastry shells filled with feta and leek and I created a gift-looking pie that is ready to make in less than 15 minutes. All you have to keep in mind is that filo is fragile and this time you have to work quick. But it’s easier than you think!

TIPS: Drain the water from your vegetables mixture and you willl get a crunchy bottom as well.

Be careful with the salt, because feta is already salty.

Bake until it is golden brown, but keep an eye on it after 30 minutes. Mine sometimes bakes on 35, sometimes it takes 45.

Heat the oil in a pan and fragrance the crushed garlic. Add the spinach leafs, the finely cut leek and sprinkle with salt. Stir fry on high until the leek is tender and golden. Drain the fat and squeeze out the water and cut into fine pieces.


Crumble the feta and mix with the eggs and the spinach & leek, Put olive oil in a bowl and get your brush. Open your filo pastry bag and take the sheets out. Don't forget to keep the ones that you are working with under a damp cloth.


Brush every filo sheet with oil and place with the oily part in the tray. Layer them leaving the corners out of the tray and moving further as you overlap them. It will look like sort of a gift when it's packed.


Put you vegetables and feta mixture in the center of the pie and gently fold the corners in the middle of the tray. Sprinkle salt and oregano on top and bake at 180 C for 40 to 45 minutes or until golden-brown.
