400 gr Plain Flour
7 gr Instant Yeast
235 ml Water
1/4 tsp Honey
2 tsp Salt if you consider it too much add rock salt on top of the focaccia before baking
Aromatic Oil
130 ml Olive Oil
1 tsp, dried Oregano
1 tbsp, dried Thyme
1 tbsp, dried Rosemary
1/4 tsp Black Pepper
3 cloves Garlic

Easy Focaccia with Garlic and Herbs



I’ve never been to Italy but my mental image about it it’s like this: green hills, a very warm day, a little table with two chairs, a glass of red wine and a warm, full of flavours focaccia. Lovely! Can’t wait to make it happen, but until that point I make only half of my dream come true with this magnificent piece of bread. Super puffy, full of garlic and herbs, fresh out of the oven focaccia!


I know it looks very impressive when we order it at Italian restaurant and I also know that you might have asked yourselves “how do they do it like this?” Well, now you have the answer: very easy! It’s not a pretentious dough, it rises like a miracle, the aromatic oil does all the job that you need and you just have to keep an eye on it not to dry it too much. And that’s it. Really, it can’t get simpler that this! Now let me enjoy my day dream while I taste this piece of Italy. Arrivederci!

Aromatic Oil

For the aromatic oil, combine olive oil with herbs, pepper and crushed garlic in a sauce pan an heat/cook for 5 minutes on low fire.



In a large bowl, mix water with honey and yeast and stir. Let it rest for 5 minutes and add to it half of the flour. Mix until incorporated and add 1/4 cup of aromatic oil. Mix again and add salt. Add the rest of the flour and knead for 10 minutes. Using the aromatic oil coat a large bowl and let the dough rise in a warm place for 1h. Preheat your oven at 220 C.


Coat a 10 inch round tray or a 9 by 13 inch rectangular (less puffy) with the same aromatic oil. Put the dough in the tray and spread using your fingers. Pour the rest of the oil and herbs on top and bake for 20 to 25 min or until golden.
