Decadent Nutella Cookies

And yes, it was my birthday! Yeeey! It was amazing, again! Very nice gifts, very warm wishes, everything was perfect. And of course, the food. This year I decided to take everyone out for a delicious tapas dinner so I did not have too much work to do. But, of course, the event could not get passed without a little baking, so I made these super mega ultra delicious Nutella Cookies for my colleagues. Very easy to make and, did I mention that they were delicious?

Preheat the oven to 180°C (360°F) and grease a 12 piece muffin tray with a nice amount of butter.

With a teaspoon, make 12 dollops of Nutella on a small metal tray covered with baking paper and put them in the freezer for about 30 to 40 mins. The Nutella has to be pretty frozen since it will start melting in the oven when you bake the cookies, otherwise it will burn inside the cookie and you won't have a nice centered filling.


Cookie Dough

Put the butter and sugar in am ixing bowl and beat (with a beater or kitchenmachine) until the sugar is nicely distributed through the butter. Add the egg and vanilla essence until everything is combined and you have a nice creamy consistency.
Sift the flour on top of the creamy mixture, add baking soda and start folding everything using a wooden spoon or (if you have one) a rubber baking spatula.

After these steps you should be left with a nice, not too sticky, cookie dough. Put the cookie dough in some plastic kitchen foil and roll it into a long sausage shape. Leave it in the fridge for about 5-10 mins.


Take the cookie dough out of the fridge and divide the sausage into 24 evenly sized pieces, for each cookie you will need a top and bottom. Roll the 24 pieces into little cookie dough balls and grab the frozen nutella dollops out of the freezer. Grab a cookie dough ball and press it a bit flatter, add one of the dollops of nutella in the middle and press another cookie dough ball on top. Gently roll a ball out of the cookie 'sandwich', making sure the nutella is not showing and a bit centered. Put the ball in the muffin tray. Repeat this for the rest of the cookies.


Once you have the muffin tray filled with your nutella cookie dough balls, put them in the preheated oven for about 14-15 minutes or until golden brown. They balls will slowly take the shape of the tray, so there is no need to flatten the cookies up front. Take out your cookies and let them cool off for 10 minutes. If you have a hard time getting them out of the tray, gently trace the edges of the cookie with a knife.
