Ingredients

300 g Brown Rice
1 small Leek
1 big Carrot
1 big red Paprika
1 big Onion
1/4 small White Cabbage
1/4 small Red Cabbage
1 small Zucchini
250 g Champignon
1 tbsp Olive Oil
2 tsp Turmeric
1 tsp Paprika Powder
1 tsp Basil dried
1 tsp Oregano
to taste 4 Seasons Pepper
to taste Kosher Salt
1/2 cup Chicken Broth

Everytime I come up with a new healthy and very tasty recipe I feel so proud of myself that I could just call myself a masterchef. But I come back to Earth pretty fast and realize that this is just a rice with vegetables, but it’s my rice with vegetables and I love it! Since I started cooking with a little more care towards our health I discovered that there are flavours that I will never love, flavours that I can make acceptables and flavours that I just fall in love with. And one from the last category is the brown rice. As you can probably guess I use the one from Lassie and I am more than attached to the nutty, crispy taste, that combines like a miracle with the carrots, the leek and the mushrooms.

But this is not all about this recipe. Everytime I make a vegetables combination I like to make a few little bags to keep in my freezer so I can grab one everytime I want to. If you like to have them fresh and get everything in the day of the preparation, just keep in mind that you have to use the remaining vegetables the next day, or they will go bad. If you are a little lazy, just like me, cut all the vegetables that I am talking about below, mix them in a bowl and divide in plastic bags or boxes. I don’t keep them more than 3 weeks and everytime I use them they are very tasty and still crunchy and fresh. And if you are really lazy, go to the supermarket and look in the already-cut section and you will find a mix that looks almost like this one. You only need to get the mushrooms separately and mix it all together and you will be perfectly fine. As you can see it depends how much time you have.

And if you go for the 100% healthy dinner chose a nice fish and grill it with a little salt. If you go for 50% healthy, like we did, take a nice piece of pork chop, spice it with cumin and curry and roast it on the grill. And if you are vegetarian mix the rice with fresh green salad and enjoy a simple and delicious meal. It is so easy to love that it almost doesn’t matter how you eat it!

Cut the paprika, carrot and zucchini in small cubes. Slice finely the cabbage and the leek and put all of them in a big bowl. Mix together and grab 2 small bags or boxes. Divide the vegetables in 3. Use one part and put the other 2 in the freezer. You should be left with around 200-250 g of vegetables mix.

Boil the rice according to the instructions on the package but remove from the fire with 2-3 minutes before it's fully cooked.

In a large deep pan heat the oil and stir fry the vegetables. Add all the spices and fry for 1-2 more minutes to release the flavours. Add the rice on top together with the chicken broth and let it reduce until the rice is dry. Serve with grilled pork or fish or just like that!
