2 medium Pears about 2 & 1/2 cups pears, peeled and diced small
1/2 cup and 2-3 tbsp for decorating the top Dried Oats
1/2 cup Milk
2 large Egg
2 cups Whole-Wheat Flour
2 tsp Baking Powder
1 tsp Vanilla Essence
100 gr & 20 gr for the tray Butter
1/3 cup Honey
1/3 cup Brown Sugar
2 tsp Cinnamon
1/2 tsp Ginger
1/4 tsp Nutmeg
1/2 tsp Salt

Breakfast Muffins With Pears and Oats

I have to admit, mornings are not my favorite moments of the day. Waking up at 5, biking to the station, running for the train and so on and so on. So by the time I am arrive at work I am already famished and craving for sweets and in desperate need to recover my energy. For the last few months I invaded the cafeteria every morning looking for my dream breakfast: croissants and sweet puff pastry! Let’s admit it, they are just plain delicious! Soft, crispy, buttery and unfortunately, not so healthy. And because lately I have been looking for a more healthy approach to food and we started lowering the levels of fat and sugars, I also needed a breakfast that followed my idea of “smart food”. And that’s when I came up with the idea of fruit muffins with lots of spices, a bit of honey and oats.

I like to call them smart food, because they are not super-mega-ultra healthy, like gluten free or anything like that, but they can be very easily adapted to anyone’s taste. And of course, they are just delicious! So perfect for me in the morning after all the marathon that I have to go through… the perfect energy booster. Oh, I forgot to say that they require very little time and attention and I love to bake them Sunday evening to have them ready for the entire week. Of course they don’t last until Friday , as I plan every week, but this can only make me proud that I discovered the breakfast of the champions.

Preheat your oven at 160 C and butter the muffin tray.


Cream the butter with sugar. Mix in the eggs, one at a time until well incorporated and add the vanilla extract.


In a big bowl, whisk together the flour, baking powder, spices, and salt. Add 1/2 of the dry ingredients, 1/2 milk and 1/2 of the honey in the bowl and mix. Repeat until all the ingredients are combined but do not overmix.


Add the diced pears and the oats and using a rubber spatula fold them in the batter.


Pour the mixture into the buttered tray and sprinkle to tops with brown sugar and dried oats. Bake for 35 minutes on 160. Remove from the oven and let the muffin cool off for 15 minutes. Take them out of the tray and enjoy next to a cup of coffee or a fruit salad.
